Ingredients:
Pie Crust
- 2 ½ cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and diced
- ¼ to ½ cup ice water
- 1 egg, beaten (for that beautiful golden crust)
Filling
- 4 cups fresh blueberries
- ¾ cup sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- ½ teaspoon cinnamon
- ¼ teaspoon allspice
Directions:
Prepare the crust:
- In a large bowl, combine the flour and salt.
- Cut in the chilled butter until the mixture resembles coarse crumbs. Don't overmix.
- Gradually add ice water, one tablespoon at a time, mixing gently until the dough comes together.
- Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
Prepare the filling:
- Take those juicy blueberries and mix them with sugar, cornstarch, lemon juice, zest, and a dash of spice. Try not to eat half of it straight from the bowl—self-control is key.
Assemble the pie:
- Preheat the oven to 400°F.
- Roll out your chilled dough like a pro, fit it into a 9-inch pie dish.

Add the top crust:
